Ingredients
Cheesecake Filling
16 oz vegan cream cheese (room temperature)
1⅓ cups confectioners’ sugar
1 tbs Sumo Citrus zest
1/4 cup Sumo Citrus juice
2 cups vegan cream
Crust
2 cups vegan graham crackers, finely crushed
1 tablespoon granulated sugar
½ cup vegan butter, melted
Instructions
- In a large bowl, beat the vegan cream cheese and vegan cream until light and fluffy.
- Add the Sumo Citrus zest and juice and beat again until thoroughly combined.
- Spoon the mixture into silicone rose molds or regular muffin molds, allowing for room at the top to add the crust later. and transfer to the freezer to set (at least 2 hours).
- While the cheesecakes are setting, make the crust by mixing the crushed graham crackers, vegan butter and sugar in a bowl and set aside.
- When the cheesecakes have set, press the crust onto each cheesecake and return to the freezer to harden (around 30 mins).
- Once the cheesecakes have all been completely set, remove them from the freezer and indulge with your Valentine!
