The Sumo Citrus adds a delicious juicy sweetness to the cookie dough and adds an extra pop of citrus flavor to the glaze. They have a crispy outer layer and a melt-in-your-mouth middle.

Ingredients
Batter
2 ½ cups all-purpose flour
1 tsp baking powder
1 cup salted butter (2 sticks), softened
¾ cups sugar
1 large egg
1 tbsp Sumo Citrus zest
1 tbsp Sumo Citrus Juice
Glaze
1.5 cup powdered sugar, sifted
1 tbsp salted butter, melted
2-4 tbsp Sumo Citrus juice
Sumo Citrus zest for garnish
Instructions
- Preheat oven to 350 degrees F
- In a small bowl, mix together flour and baking powder. Set aside.
- Cream together butter and sugar until light and fluffy for 3-4 minutes. Beat in egg for 1 minute. Mix in zest and juice until just combined. Mix in flour and baking powder mixture gradually on low until just combined.
- Drop tablespoon-sized balls of dough onto cookie sheet, spaced 2 inches apart. If you want a flatter cookie, flatten slightly before baking.
- Bake for 10 minutes.
- Let cool slightly then transfer to a wire rack to cool completely then top with icing.
For the glaze:
- In a bowl whisk together powdered sugar, butter, and juice until smooth.
- Spread over the top of cooled cookies. Let set for 20-30 minutes.
- Top with zest and enjoy!
