1 cup fresh or thawed frozen cranberries

2 tbsp organic pure cane sugar

1 tbsp agave nectar

3 Sumo Citrus Mandarins

6 to 8 slices thick-cut ciabatta or country bread

¼ cup dairy free cream cheese

In a medium saucepan, add cranberries, organic cane sugar, and agave nectar, over medium heat. Stir well and bring mixture to a simmer. Simmer for 8 to 10 min, stirring occasionally, as juices are released and all but 2 to 3 tbsp of liquid has evaporated.

While cranberries are cooking, zest Sumo Citrus Mandarins and reserve zest for serving. Cut off ends of Sumo Citrus Mandarins. With a flat side down, cut along the peel to remove peel and pith so that the orange flesh is exposed. Then cut orange segments from between each membrane. Add segments into pan, stir, and remove pan from heat to let cool completely.

As mixture cools, toast bread slices under broiler until crisp, or in a toaster. Spread dairy free cream cheese on slices. When orange cranberry mixture has cooled, it is ready to serve. Top toasts with mixture, using a slotted spoon if preferred to avoid too much liquid. Top with zest.
