Wondering what to do with all of your leftover peels? Try these amazing Candied Sumo Citrus Peels:

  1. You’ll need about 6 Sumo Citrus for this recipe. Place a small piece of Sumo Citrus peel white side up on a cutting board. Use a paring knife or filet knife to carefully remove as much of the white pith as possible. Then slice into thin strips about 1⁄2 inch wide.
  2. Place in a small saucepan with cold water, bring to a boil and drain. Repeat two more times.
  3. Add 2 cups of water and 2 cups of sugar to the pan; bring to a boil, stirring until the sugar dissolves. Add the peels, then reduce heat to a simmer. Cook for 90 minutes, stirring occasionally, until the peels are translucent.
  4. Strain the peels and use the syrup in coffee or baked goods. (Refrigerate in a jar for up to 3 weeks.)
  5. Line a baking sheet with parchment and spread the peels in a single layer. Let them cool and dry for a few hours.
  6. Toss with sugar, then place in a container with a tight lid. Use within a couple of weeks
