Sumo Citrus Yogurt Custard Toast

Ingredients

  • 2 slices thick-cut sourdough, brioche, or challah bread
  • 1/3 cup plain Greek yogurt
  • 1 egg
  • 1 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • Zest of 1 Sumo Citrus
  • 2-3 Sumo Citrus segments, peeled and sliced
  • A sprinkle of cinnamon
  • Honey, for drizzling
  • Chopped pistachios or almonds

Instructions

Preheat oven to 375 F and line a baking sheet with parchment paper.

In a small bowl, whisk together Greek yogurt, egg, maple syrup, vanilla extract, and Sumo Citrus zest.

Press the center of each bread slice down to create a well.

Spoon the custard mixture into the center of each slice and top with Sumo Citrus slices.

Bake for 12-15 minutes until the custard is set and the bread is golden.

Once baked, sprinkle on cinnamon, drizzle with honey and top with chopped pistachios or almonds.

Serve this warm and straight from the oven for the perfect balance of creamy and crisp. Add a sprinkle of cinnamon or a side of fresh berries to brighten up the plate.
