Sumo Citrus Yakitori

An at-home take on Japanese chicken skewers with juicy chicken, broiled or grilled, and lacquered with a sweet-savory Sumo Citrus glaze that adds brightness and shine, balancing the soy-forward richness.

Ingredients

Skewers

  • 1 1/2 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 3–4 scallions, cut into 1-inch pieces (optional)
  • Neutral oil, for the grill pan/broiler rack
  • Bamboo skewers, soaked 30 minutes (or metal skewers)

Sumo Citrus Glaze

  • 1/3 cup soy sauce
  • 1/4 cup fresh Sumo Citrus juice
  • 2 tbsp honey (or brown sugar)
  • Zest of 1 Sumo Citrus
  • 1 tbsp mirin (optional)
  • 1 tsp grated fresh ginger (optional)
  • 1 tsp cornstarch + 1 tbsp water (optional, to thicken)

To finish (optional)

  • Toasted sesame seeds
  • Extra Sumo Citrus zest

Instructions

  1. Make the glaze: In a small saucepan, simmer soy sauce, Sumo Citrus juice, honey, and zest (plus mirin/ginger if using) for 6–8 minutes until slightly reduced. For a thicker lacquer, stir in cornstarch slurry and cook 30–60 seconds. Set aside.
  2. Build skewers: Thread chicken (and scallion pieces if using) onto skewers.
  3. Cook: Broil on a lightly oiled rack 5–7 minutes per side (or grill), until chicken is cooked through and lightly charred.
  4. Glaze: Brush skewers generously with glaze and return to heat 1–2 minutes to set. Repeat once more for extra shine.
  5. Serve: Sprinkle with sesame seeds and a little extra zest. Serve hot.
