Sumo Citrus Tofu Bao Buns

Ingredients

  • ½ julienne cut English cucumber
  • ½ cup shredded carrots
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • ½ teaspoon salt
  • Zest and juice of one Sumo Citrus
  • 2 tablespoons hoisin sauce
  • 2 tablespoons Shaoxing wine
  • 1 tablespoon soy sauce
  • 1 crushed garlic clove
  • 2 teaspoons sriracha
  • 1 teaspoon grated ginger
  • ½ teaspoon Chinese 5 spice
  • 1 (16-ounce) package super firm tofu
  • 1 tablespoon avocado oil

Instructions

  1. In a medium bowl combine the cucumber, shredded carrots, rice vinegar, maple syrup, and salt. Cover and set in the fridge to marinate.
  2. In a small bowl, combine the Sumo Citrus zest and juice, hoisin sauce, Shaoxing wine, soy sauce, garlic, sriracha, ginger, and Chinese 5 spice.
  3. Cut the tofu into 1-2-inch x ¼-inch squares.
  4. Add the oil to a pan and bring the heat to medium and add the tofu slices in a single layer. (working in batches) Cook for 6 minutes on each side.
  5. Remove the tofu from the pan and add the sauce. Bring to a bubble and cook for 5 minutes, then add the tofu back in and simmer for 10 minutes.
  6. Add the frozen bao buns to a steamer that is positioned over a pot of boiling water. Cover and steam for 15 minutes.
  7. Slice open buns and stuff with the cooked tofu and marinated slaw.
