Sumo Citrus Tepache

Bright, lightly fermented Sumo Citrus tepache made from citrus peel and pineapple rind with warm spices—an easy, zero-waste refresco that’s bubbly, tangy, and refreshing.

Ingredients

  • Peel of 2 Sumo Citrus (washed; pith removed)
  • Rind of 1 large organic pineapple
  • 1/2 cup cane sugar
  • 2 cinnamon sticks
  • 2 whole cloves
  • 4 1/2 cups filtered water

Instructions

  1. Add all ingredients to a large 64 oz jar and stir until sugar is dissolved.
  2. Cover with a cloth and allow to ferment for ~48 hours (cooler temperatures may require a longer fermentation).
  3. You should start to see bubbles/fizz and the flavor should shift from sweet to slightly tangy; a thin white foam may form on top.
  4. Strain the mixture and pour into airtight jars/bottles to carbonate further.
  5. Let bottles sit at room temperature for 12–24 hours, then chill in the refrigerator.
  6. Serve over ice on its own, or top with sparkling water and garnish with a slice of Sumo Citrus.
