Sumo Citrus Tanghulu

Sweet, shiny, and seriously fun to make, each juicy Sumo Citrus segment is dipped in molten sugar for a glassy, crunchy shell that shatters with every bite.

Ingredients

  • 2 Sumo Citrus, peeled and separated into segments
  • 1 cup granulated sugar
  • 1/2 cup water
  • Ice water bath (for setting the candy)
  • Bamboo skewers

Instructions

  1. Peel the Sumo Citrus and separate into segments and pat them completely dry. Seriously, the drier the better for that perfect glossy coat.
  2. Thread 2–3 Sumo Citrus segments onto each skewer and set aside.
  3. Combine sugar and water in a stainless steel saucepan. Heat over medium until bubbling… then resist the urge to stir!
  4. Cook for 15–20 minutes, until the syrup hits 300°F (the hard crack stage).
  5. Carefully dip each skewer into the syrup, turning to coat, then plunge into ice water to set that candy shell.
  6. The sugar will harden into a glassy crunch while the citrus inside stays juicy and bright.
Pro tip: Tanghulu is best enjoyed fresh. No saving for later when it’s this good!
