1 cup uncooked quinoa
3 Sumo Citrus Mandarins, divided
3 tbsp olive oil
2 tsp apple cider vinegar
Juice and zest of 1 lemon
1 ½ tsp Dijon mustard
1 tsp kosher salt
½ tsp black pepper
½ tsp garlic powder
2 tbsp finely chopped fresh dill
½ pint cherry tomatoes, halved
½ seedless cucumber, diced
1/3 cup thinly sliced fennel
1 15 oz. can chickpeas, drained and rinsed
2 tbsp finely chopped red onion
1 avocado, diced
Cook quinoa according to package directions, then add to a large mixing bowl. Meanwhile, make the dressing. Squeeze the juice of 1 Sumo Citrus Mandarin into a bowl. Some orange flesh is fine to include. Whisk in the olive oil, apple cider vinegar, juice and zest of lemon, Dijon mustard, kosher salt, black pepper, garlic powder, and fresh dill.
Remove peel from remaining 2 Sumo Citrus Mandarins while keeping them whole. Then make slices cross-wise against the segments around 1 cm thick. Then cut each piece into 4 to 6 pieces. Add the cherry tomatoes, cucumber, fennel, chickpeas, and red onion to the mixing bowl and toss with quinoa. Gently stir in the dressing, serve, and top with Sumo Citrus Mandarin slices and avocado.
