Sumo Citrus King Cake

Ingredients

For the Dough:

  • 1/3 cup Warm Water
  • ¼ cup Granulated Cane Sugar
  • 2 tsp. Instant Yeast
  • ½ cup Whole Milk
  • 2 tbsp. Unsalted Butter, melted
  • 1 tsp. Fine Sea Salt
  • 1 large Egg, beaten
  • 1 tsp. Vanilla Extract
  • 2 ¾ cups Flour
  • 1 Sumo Citrus, zest and juice

For the Filling:

  • 4 oz. Cream Cheese
  • 1/3 cup Brown Sugar
  • ¼ cup Granulated Cane Sugar
  • 1 tbsp. Ground Cinnamon
  • Zest of 1 Sumo Citrus

For the Frosting:

  • 2 cups Powdered Sugar
  • 3 tbsp. Milk
  • 1 tbsp. Melted Butter
  • 1 tsp. Sumo Citrus Juice, and/or zest
  • 1 tsp. Vanilla Extract
  • Green, Yellow, and Purple Sprinkles

Instructions

To Make the Dough:

  1. In the bowl of a stand mixer fitted with the hook attachment, combine the warm water, yeast, and sugar. Mix and let sit for 5-10 minutes, until foamy.
  2. Add the milk, salt, egg, vanilla, sump citrus zest, and juice of ½ Sumo Citrus. Mix well.
  3. Add the flour and knead with the hook attachment for 4-5 minutes, until the dough pulls away from the stand mixer bowl. Cover and let rise in a warm environment for 45 minutes to 1 hour, until doubled in volume.
  4. Preheat oven to 350F. Line a large, rimmed baking pan with parchment paper.
  5. Roll out the dough on a clean, floured surface into a large rectangle that’s 1/8” thick, about 10×16” dimensions.

To Make the Filling:

  1. In a stand mixer bowl fitted with the paddle attachment, combine all the filling ingredients. Mix until smooth.
  2. Spread the filling mixture over the dough with an offset spatula.
  3. Using a knife, slice the dough in half lengthwise into two parts. Roll up each part tightly into a log.
  4. Braid the two pieces together, then wrap in a circle and pinch the ends together. Place on the prepared baking pan.
  5. Cover and let rise in a warm environment for 30-40 minutes.
  6. Brush with an egg wash or olive oil to bake 20-30 minutes, rotating the pan halfway through, until golden on top.

To Make the Frosting:

  1. Whisk all ingredients together in a large bowl, spoon on top of the semi-cooled kings’ cake, then immediately decorate with the sprinkles.
