Let the ice cream soften for 10 minutes in a bowl.
Zest the Sumo Citrus and dice the segments. Add the zest to the softened ice cream, stir, and put back into the freezer. Save the segments for topping.
In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined (or make the waffle batter from a pre-made mix).
In a separate bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Stir until the mixture is uniform.
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
Spray the bubble waffle maker with cooking spray and preheat. Pour a layer of batter into the bubble waffle maker and cook according to the waffle maker directions. While the waffle is still warm and pliable, remove it and place it in a taco holder to harden. Repeat with remaining batter.
