This refreshing Mule combines the legendary flavor of Sumo Citrus with homemade ginger syrup to create the perfect balance between sweet and spicy.

For the Ginger Syrup:
Start by making your Ginger Syrup:
Peel a knob of fresh ginger, then thinly slice. Set aside.
Add 1/2 cup sugar and 1/2 cup water to a saucepan. Place on stove over medium heat. Stir occasionally until sugar dissolves.
Add fresh ginger to saucepan, then reduce heat to a simmer for approx. 10 minutes.
Remove from heat and allow to cool completely.
Strain into an airtight container and store in the refrigerator. Syrup should last for up to a month.

To make a Sumo Citrus and Ginger Whiskey Mule:
Add 4-6 Sumo Citrus sections and 1/2 oz lime juice to a cocktail shaker. Muddle until the Sumo Citrus has broken down.
Add whiskey and ginger syrup.
Add ice, then shake until chilled.
Double strain into a mule mug or rocks glass filled with ice.
Top with ginger beer.
Garnish with a sprig of fresh mint.
