Sumo Citrus Dry Rub Smoked Chuck Roast Tacos

Tender, melt-in-your-mouth chuck roast is marinaded in sweet Sumo Citrus and spices and cooked to perfection for an unbelievable flavor on its own or on tacos.

Ingredients

For the Chuck Roast:

  • 2-3 lbs. Beef Chuck Roast
  • 2 Sumo Citrus
  • ½ cup Coconut Sugar
  • 1 tbsp. Olive Oil
  • 1 tbsp. each: Dried Oregano, Black Pepper
  • 2 tsp. Fine Sea Salt
  • 1 tsp. each: Garlic Powder, Paprika, Dried Onion Powder

 

For the Tacos:

  • Corn Tortillas
  • Pickled Onions
  • Fresh Cilantro
  • Avocados, sliced or mashed
  • Lime wedges, for serving

Instructions

Preheat oven to 400F.

In a bowl, combine the coconut sugar and zest of the Sumo Citrus. Rub the mixture together to help release the essence. Add the seasonings and mix to combine.

Rub the dry seasonings mixture all over the chuck roast and let marinate at room temperature for 20 minutes, or up to overnight in the fridge.

Add the olive oil to a dutch oven pot, then add the seasoned chuck roast and any leftover dry rub. Cover with the lid and let cook for 30 minutes in the oven.

Reduce the oven heat to 350F, then remove the dutch oven lid to add the juice of the Sumo Citrus to the beef chuck. Cover back with the lid to cook 2-3 hours, until tender and easily shreds between two forks.

Enjoy the beef on its own or on warmed corn tortillas layered with avocado, pickled onions, fresh cilantro, and lime wedges!
