Ingredients
- 2 lbs. Chicken Thighs, boneless and skinless
- ¼ cup Olive Oil
- 2 Sumo Citrus, zest and juice
- 2 tbsp. Honey
- 4 Garlic Cloves, minced
- 1 tbsp. Smoked Paprika
- 1 tbsp. Ground Cumin
- 1 tsp. Crushed Red Pepper Flakes
- 1 tsp. Sesame Seeds
- 3 medium Sweet Potatoes, thinly sliced
- ¼ cup Fresh Mint, chopped
- ¼ cup Fresh Dill, chopped
- Crumbled Feta, for serving
- Naan, for serving
- Baby Arugula, for serving
Instructions
- Preheat oven to 425F. Line a large, rimmed baking pan with parchment paper.
- In a large bowl, combine the chicken thighs, olive oil, zest and juice of the Sumo Citrus, honey, minced garlic, paprika, cumin, red pepper flakes, sesame seeds, and thinly sliced sweet potatoes. Toss until mixed well. Season with salt and black pepper to taste.
- (Optional: Marinate 20 minutes to overnight.)
- Evenly spread out the seasoned chicken and potatoes on the prepared baking pan.
- Bake for 30-40 minutes, until potatoes are fork tender and chicken is fully cooked.
- Garnish the chicken with the freshly chopped dill and mint.
- Serve warm with the naan, crumbled feta, and baby arugula to enjoy!
