Sumo Citrus Caramel Sauce

Ingredients

  • Zest of 1 Sumo Citrus
  • ½ cup fresh Sumo Citrus juice (approximately 1-2 Sumo Citrus)
  • 1 cup granulated sugar
  • ¼ cup water
  • 2 tablespoons unsalted butter
  • ½ cup heavy cream or canned coconut milk

Instructions

  • Zest the Sumo Citrus then extract the juice to measure ½ cup.
  • In a medium saucepan, combine the granulated sugar and the water. Stir gently for about 3 minutes until the sugar dissolves.
  • Once the mixture reaches a boil, stop stirring and allow it to cook undisturbed for about 8 minutes. It will change to a deep amber color.
  • Remove from heat.
  • Now pour in the Sumo Citrus juice and stir to combine the juice with the caramelized sugar.
  • Return the saucepan to low heat and add the butter, stirring for a few minutes until it melts completely into the mixture.
  • Gradually pour in ½ cup of heavy cream (or canned coconut milk), stirring constantly to achieve a smooth consistency.
  • Stir in the citrus zest and salt.
  • Continue to cook the sauce on low heat for an additional 2–3 minutes, allowing the flavors to meld and the sauce to thicken.
  • Remove the saucepan from heat and let the caramel sauce cool for about 10–15 minutes.
  • Transfer the sauce to a glass jar or airtight container. Once cooled completely, the sauce can be stored in the refrigerator for up to two weeks.
