Sumo Citrus Cacio e Pepe with Citrus Zest

Blending creamy, spicy, and a pop of sweetness, this traditional Italian dish gets a kick from the Sumo Citrus zest and juice.

Ingredients

  • 2 teaspoons salt
  • 8 ounces spaghetti
  • 3 tablespoons unsalted butter
  • 1 ½ teaspoons freshly cracked pepper
  • 1 cup grated Parmesan (regular or dairy-free)
  • Zest of 1 Sumo Citrus
  • 1 tablespoon Sumo Citrus juice

Instructions

  1. Zest and juice the Sumo Citrus. Set aside.
  2. Bring a large pot of water to boil. Add the salt and pasta and reserve 1 cup of the pasta water before draining.
  3. In the same pot that you cooked the pasta in, add the butter and bring the heat to medium. Add the pepper and toast for 1 minute.
  4. Add the cooked pasta and ¾ cup of the pasta water. Stir to combine adding more reserved pasta water if necessary.
  5. Add the Sumo citrus zest, juice, and the Parmesan cheese. Stir until combined.
  6. Top with fresh herbs and more pepper if desired.
  7. Keep warm until serving.
Pairs nicely with a green salad. Store leftovers in an airtight container in the fridge for up to 5 days.
