Ingredients

  • 8 ounce cream cheese (at room temperature)
  • 1 Sumo Citrus (zested and juiced)
  • ¼ cup breadcrumbs
  • ½ red bell pepper (chopped)
  • ½ green bell pepper (chopped)
  • 3 large tortillas
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350℉ and line a baking sheet with parchment paper. Leave to the side.
  2. In a bowl, add cream cheese, bread crumbs and Sumo Citrus zest and juice. Mix with a fork until well combined. Add the chopped peppers and mix them in with the cream cheese.
  3. Spread the cream cheese mixture over each tortilla, splitting the mixture evenly for each tortilla, and sprinkle ⅓ of the cheddar cheese on each tortilla. Roll up the tortillas tightly and cut them into 1 inch slices using a serrated knife.
  4. Place the slices gently on the baking sheet, leaving space between each.
  5. Bake at 350℉ for 10 minutes, then for another 3 minutes under the broiler.
How to Enjoy – Best enjoyed warm, served with salsa or sour cream.
