Sumo Citrus and Sardine Toast with Fennel Slaw

Ingredients

  • 1 Sumo Citrus, peeled, quartered, and sliced
  • 1 small fennel bulb, halved, cored, and thinly sliced
  • 1 small shallot, thinly sliced
  • 4 slices of sourdough bread, toasted
  • 1 can sardines
  • Parsley, for garnish
  • 1 Tablespoon extra virgin olive oil
  • 1 Tablespoon apple cider vinegar
  • A pinch salt
  • A dash of black pepper
  • Pink Peppercorn, for garnish (optional)

 

Garlic Sumo Citrus Mayo:

  • ¼ cup mayonnaise
  • 1 Tablespoon juice and ½ teaspoon zest from Sumo Citrus
  • 1 clove of garlic, grated
  • A pinch salt

Instructions

In a mixing bowl, toss together Sumo Citrus, fennel, shallots, olive oil, apple cider vinegar, salt, and pepper. Set aside.

In another small bowl, combine all the Garlic Sumo Citrus Mayo ingredients.

Spread the Sumo Citrus Mayo on your piece(s) of toast and arrange a layer of sardines. Top with fennel slaw and garnish with parsley and crushed pink peppercorn.

Enjoy immediately!
