Sumo Citrus and Goat Cheese Pizza

Ingredients

  • 1 batch pre-made pizza dough
  • 2 tablespoons olive oil
  • 1 clove garlic
  • Zest and citrus segments from 1 Sumo Citrus
  • ½ red onion, sliced
  • 8 ounces crumbled goat cheese
  • 1 cup arugula

Instructions

  1. Let the pizza dough sit at room temperature for 30 minutes
  2. In a small bowl combine the olive oil, garlic and Sumo citrus zest. Set aside.
  3. Preheat the oven to 475 F.
  4. Cut about ¼ inch from the top and bottom of Sumo citrus so it sits flat.
  5. Position the fruit with one of the flat sides down and use a sharp knife to cut in a downward motion, slicing the peel from each one.
  6. Position the fruit on its side and, with a sharp paring knife, cut the fruit into sections following the natural separations. Cut these sections into smaller pieces.
  7. Roll out the dough to fit a 12-inch round pizza pan.
  8. Brush the dough with the olive oil, garlic, and zest mixture.
  9. Put the pizza in the oven for 8 minutes.
  10. Add the crumbled goat cheese and red onion and bake for 4 more minutes.
  11. Remove from the oven and add the arugula and Sumo Citrus segments.
  12. Slice and serve.
Enjoy fresh out of the oven, where the sweet citrus, tangy goat cheese, and crispy crust create the perfect balance of flavors. Pair it with a simple green salad for a light, refreshing meal. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in a 375°F oven for 5-7 minutes to keep the crust crispy.
