Instructions
- Let the pizza dough sit at room temperature for 30 minutes
- In a small bowl combine the olive oil, garlic and Sumo citrus zest. Set aside.
- Preheat the oven to 475 F.
- Cut about ¼ inch from the top and bottom of Sumo citrus so it sits flat.
- Position the fruit with one of the flat sides down and use a sharp knife to cut in a downward motion, slicing the peel from each one.
- Position the fruit on its side and, with a sharp paring knife, cut the fruit into sections following the natural separations. Cut these sections into smaller pieces.
- Roll out the dough to fit a 12-inch round pizza pan.
- Brush the dough with the olive oil, garlic, and zest mixture.
- Put the pizza in the oven for 8 minutes.
- Add the crumbled goat cheese and red onion and bake for 4 more minutes.
- Remove from the oven and add the arugula and Sumo Citrus segments.
- Slice and serve.
