Spinach Salad with Sumo Citrus

The Sumo Citrus is a perfect sweet and fresh star of this salad. Apples and dried cranberries give this salad some additional pops of sweetness. The sweet and savory combination makes this one a winner! There is no shortage of textures, thanks to the crisp apple and toasted walnut, paired with creamy vegan feta.

It makes a great side or even as an entrée salad by adding some chickpeas or cannellini beans. The balsamic vinaigrette is so simple to make and is easily doubled if you would like to have extra on hand.

Ingredients

5 oz. baby spinach

2 Sumo Citrus

2 apples, thinly sliced (or chopped if preferred)

1/31/2 cup crumbled vegan feta, to taste

1/3 cup dried cranberries

1/3 cup toasted walnuts, coarsely chopped

¼ cup sliced scallions

Balsamic Vinaigrette

¼ cup olive oil

3 tbsp balsamic vinegar

½ tsp kosher salt

½ tsp garlic powder

¼ tsp black pepper

2 tsp Dijon mustard

1 tbsp maple syrup

Instructions

Place spinach in a large serving bowl, or divide into servings. Peel Sumo Citrus and cut cross-wise through the middle, then slice each half. Arrange orange slices on top of spinach. Top with sliced apples, vegan feta, dried cranberries, toasted walnuts, and sliced scallions.
