Mini Sumo Citrus Trifles

Spoonfuls of sunshine that layer fluffy citrus-zested cake with airy mascarpone frosting, and juicy slices of Sumo Citrus for a dessert that’s as fresh as it is indulgent.

Ingredients

Cake:
  • 1 box of your favorite cake mix (yellow, vanilla, white, or angel food all work great!)
  • Ingredients listed on the cake mix package
  • Zest of 1 Sumo Citrus
Mascarpone Frosting:
  • 2/3 cup cold mascarpone
  • 1/2 cup cold heavy cream
  • 1/3 cup powdered sugar, sifted
  • 1 tbsp Sumo Citrus juice (about half of one fruit)

Instructions

  1. Prepare your favorite cake mix according to the package, then stir in the zest of one Sumo Citrus for that bright, sunshiney twist.
  2. Follow the box directions, then let the cake cool completely… patience pays off here!
  3. Cut the cooled cake into ½–1 inch cubes and set aside. (You’ll want to snack on a few, but save most for layering.)
  4. In a medium mixing bowl, combine mascarpone, heavy cream, powdered sugar, and a splash of Sumo Citrus juice.
  5. Using an electric hand mixer, whip for 2–3 minutes until soft, cloudlike peaks form.
  6. Transfer the frosting to a piping bag and refrigerate until you’re ready to assemble. (It’ll stay perfectly fluffy for up to 2 days.)
  7. In cocktail glasses, layer cake cubes, piped frosting, and Sumo Citrus slices.
  8. Keep layering until the glass is full, then grab a spoon and dive into citrusy bliss.
