It’s made in the air fryer instead of deep fried and is made with gluten-free and paleo-friendly ingredients. It still has a great crisp and a pop of citrus flavor thanks to the unbeatable sweetness of Sumo Citrus that takes your ordinary orange chicken to legendary status. 

Plus, the healthy swaps in this recipe will leave you feeling great without sacrificing the indulgent flavor and crunch. Pair with rice and steamed veggies for a night when you want an easy, healthy dinner that is satisfying and tastes incredible.

Ingredients

2 lbs boneless chicken breast

¾ cup arrowroot 

2 eggs, whisked 

1 cup freshly squeezed Sumo Citrus juice 

4 cloves garlic 

1.5 tsp minced ginger 

2 tbsp rice wine vinegar 

1 tbsp fish sauce 

¼  cup coconut aminos 

2-3 tbsp honey (depending on desired sweetness) 

¼ – ½  tsp red pepper flakes (depending on desired spice level)

¼  tsp salt 

2 tsp arrowroot starch  + 1 tbsp water 

Zest from 1 fresh Sumo Citrus

Instructions

  1. Preheat the air fryer to 375F. 
  2. Cut chicken into 1 inch cubes. Coat with whisked egg mixture. 
  3. In a large plastic bag, add arrowroot. Transfer chicken pieces to the bag, letting excess egg mixture drop off. 
  4. Once all the chicken is added, close the bag and shake until each piece is well coated. 
  5. Spray the bottom of the air fryer with cooking spray. Add chicken in an even layer and spray top with cooking spray. 
  6. Air fry at 375 for 10-15 minutes until lightly browned and cooked through. 
  7.  In a separate small bowl, whisk together the arrowroot and water. 
  8. In the meantime make sauce. In a medium skillet, add the Sumo Citrus juice, garlic, ginger, vinegar, fish sauce, coconut aminos, honey, and red pepper flakes. Whisk and heat for a few minutes until thickened. 
  9. Whisk in the arrowroot slurry. Cook 3-4 more minutes until thickened. Remove from heat and stir in orange zest. 
  10. Toss chicken in the sauce. Garnish with green onions. Serve with rice and veggies. Enjoy!
