Ingredients

For the Sumo Citrus Salad:

  • 2 cups Baby Arugula 
  • 2 large Heirloom Tomatoes, thinly sliced
  • 2 Sumo Citrus, peeled and thinly sliced
  • 2 tbsp. Fresh Dill, chopped
  • 2 tbsp. Fresh Basil, chopped
  • 2 tbsp. Capers
  • 8 oz. Burrata, pulled apart into bite-sized pieces

 

For the Vinaigrette:

  • Juice of 1 Sumo Citrus
  • ¼ cup Olive Oil
  • ¼ cup Apple Cider Vinegar
  • 1 tsp. Dried Italian Herb Seasonings

Instructions

  1. To Make the Vinaigrette: Combine all ingredients together. Season with salt and black pepper to taste. Set aside. 
  2. To Make the Citrus Salad: Add the arugula to a large serving platter. Layer on top of the arugula alternating slices of sumo citrus and tomatoes. 
  3. Garnish with the freshly chopped mint and basil. Top with the capers and pulled apart burrata. 
  4. Drizzle the vinaigrette over the Sumo Citrus salad right before serving. Season with salt and black pepper to taste. Enjoy!
