Ingredients

2 cups cooked brown, green lentils, or black lentils

½  diced English cucumber (peel on)

1 diced red pepper

¼ cup chopped parsley

2 tablespoons chopped mint

1 Sumo Citrus, diced segments

4 Flatbread rounds

Sumo Citrus Dressing:

Zest of one Sumo Citrus

Juice of one Sumo Citrus

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon Dijon mustard

½ teaspoon pink Himalayan salt

½ teaspoon sumac

Instructions

  1. In a large bowl, combine the lentils, cucumber, red pepper, parsley, and mint.
  2. In a small bowl whisk together the dressing ingredients.
  3. Toss the dressing with the lentil mixture and fold in the Sumo Citrus diced segments.
  4. Warm up the flatbread, layer in the lentil mixture and serve. Also can be served with toasted pita bread as a dip.
