With the high price of eggs these days, you need this quick and easy recipe for a Sumo Citrus Snacking Cake. It’s great to keep on hand when you’re in need of a delicious dessert without any of the hassle. Recipe details follow 👇: Cake: 3⁄4 cup granulated sugar 1 tablespoon Sumo Citrus zest 1 1⁄2 cups all-purpose flour 1 teaspoon baking soda 1⁄2 teaspoon baking powder 1⁄4 teaspoon salt 1⁄2 teaspoon ground cinnamon 1⁄4 teaspoon fresh ground nutmeg 1 cup fresh-squeezed Sumo Citrus juice 1⁄3 cup vegetable oil 1 tablespoon apple cider vinegar 1 teaspoon vanilla extract Glaze: 1 1⁄2 cups powdered sugar 1⁄4 teaspoon salt 1 teaspoon Sumo Citrus zest 1⁄2 teaspoon vanilla extract 2 to 4 tablespoons fresh-squeezed Sumo Citrus juice Instructions: 1. Preheat the oven to 350°F. Grease and line an 8-inch round cake pan and set aside. 2. In a large mixing bowl, rub the sugar and Sumo Citrus zest together to bring out the maximum flavor. 3. Whisk in the flour, baking soda, baking powder, salt, cinnamon and nutmeg. 4. Stir in the Sumo Citrus juice, vegetable oil, apple cider vinegar, and vanilla extract until evenly combined. 5. Pour the batter into the prepared pan and spread out evenly. Give it a few taps on the counter to remove any air bubbles. Bake in the preheated oven until golden brown and a toothpick, inserted in the middle, comes out clean, about 20 to 25 minutes. 6. Remove the pan from the oven and allow to cool on a wire rack for 10 minutes before inverting onto a serving platter. 7. Remove the pan and parchment paper and allow the cake to cool completely. 8. In a large bowl, whisk together the powdered sugar, salt, Sumo Citrus zest, vanilla and as much Sumo Citrus juice as needed to create a pourable glaze. 9. Once the cake has cooled completely, pour the glaze over and spread out evenly. 10. Allow to set for 10 minutes before slicing and serving. Enjoy!
